Many individuals have busy schedules and broken routines and are not able to have three balanced meals a day from the food pyramid that would optimize health. This is where the nutritional vitamins come to the rescue.
Vitamins are in two groups, both classified by the materials that will dissolve them. The fat-soluble vitamins dissolve in fat before they are taken into the blood stream to be stored in the liver. These vitamins are A, D, E, and K. The next groups are the water soluble vitamins. These vitamins are not stored in the body and most of them are passed through urination. It is these vitamins that the body needs a continuous supply of and they are the B-complex and vitamin C. Heat easily destroys these vitamins and so they should be kept refrigerated.
Vitamin C is readily available through citrus fruits, green leafy vegetables, berries, bell pepper, tomatoes and potatoes. Some sources for vitamins B1, B2, B6, folic acid and niacin are pork, liver, whole grain products, and legumes. Vitamin B12 is found only in animal products such as meats, liver, kidney, fish, eggs, milk and milk products, oysters, and shellfish.
